This is my number one salad recipe! I never get tired of this salad because you can have it as a complete meal rather than a just a side. Try it! I love it because it doesn’t require any dressing. It’s very filling and tasty.

Fred’s Salad Recipe

The ingredients:

  • Greens
  • Various veggies (tomatoes, cucumbers, etc.)
  • 1/2 avocado (optional)
  • 1 ounce diced tofu or smoked tofu (this is also optional but tasty)
  • 3/4 to 1 cup of cooked beans (chickpeas are great)
  • A handful of berries or other fruits (peaches, mangoes). I love this component because it adds sweetness to the salad. But not everybody likes fruit in their salad. Something to try. I find it makes the salad much more satisfying!
  • Lemon or lime juice (Optional)
  • Nutritional yeast
  • Seasonings (salt sprinkled on top)
  • Balsamic vinegar or balsamic glaze

    Hi, Fred.
I think you are very helpful with all your wonderful info; but please do your research on nutritional yeast. It is a neurotoxin in the body, which manifests like MSG. You can get headaches, dizziness, etc, if sensitive. Even if not sensitive, it is absolutely no good to ingest in our bodies.

Whatever happened to the food combining rule of eating fruit on its own on an empty stomach??

  3. Carmen says:

Is there an alternative to replacing the nutrional yeast in the salad recipe?

  4. Shirley says:

You also might want to do some research on the harmful effects of tofo on the body such as hormone imbalance and gmo problems.
