Nutty Chickpea Roasted Salad

Cold weather? You can still enjoy a salad.

Sometimes I get stuck in a rut, eating the same type of food every week. But just shifting a small detail in preparation really mixes it up! Instead of a cold salad on these chilly autumn days, this really hits the spot.

You know what my favorite part is? The dressing! Try doubling it and use the extra on grains or beans later in the
week.

Total Prep Time: 20 minutes

Serves: 6

Ingredients Salad

4 cups cooked chickpeas
2 cups walnuts or pecans, pan toasted and roughly chopped
3 Tbl. coconut oil
2 red onions, chopped
10 oz. white mushrooms, sliced
1 lb. green beans, chopped into small rounds
1 large carrot, diced
1 red pepper, diced
Generous salt and pepper

Ingredients Dressing

1/2 cup lemon juice
3 Tbl. melted coconut oil
4 Tbl. tahini
2 cups loosely packed fresh basil leaves 1 tsp salt
1 tsp ground ginger
1 tsp garlic powder

Directions
Preheat oven to 400F. In a very large bowl, combine chickpeas and walnuts with all veggies except onions. In a large pan, heat coconut oil and cook onions until soft. Pour onions with their oil into the bowl and combine. Season with salt and pepper. Transfer to a roasting pan and cook in the oven for 15 minutes.

For dressing, combine all ingredients in a food processor and blend.

Top roasted veggies with dressing and serve. Try it over greens, with quinoa or by itself!
