Fettuccini Rawfredo – A Recipe from Registered Nurse, Advanced Health Practitioner, and Chef Rene Oswald.

Fettucini Rawfredo – A Raw Food Dish from Chef Rene Oswald

Makes four to six servings (Approximately two cups each)

Rawfredo Sauce

  • 1 yellow bell pepper, seeds removed and cut into 1 1/2” pieces
  • 2 stalks celery, cut into 1 1/2” pieces
  • 1/3 cup macadamia nuts, soaked for 30 minutes
  • 2/3 cup sunflower seeds, soaked for 8 hours and sprouted
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon ground white pepper
  • 2 tbsp fresh-squeezed lemon juice
  • 1 tsp Himalayan sea salt or 1/4 oz. dulse
  • 1/4 cup chia gel (optional)

Place the above ingredients in a high-speed blender. Run on high speed with tamper, adding water if necessary until it reaches a cheese sauce consistency.

‘Fettucini’ Recipe

  • Zucchini (1 per person)
  • Fresh chives, chopped

Prepare zucchini using a mandolin or vegetable peeler to make long, flat, fettucini-type noodles or angel hair pasta. Pour sauce over zucchini noodles and
sprinkle with chives. Enjoy!
