Truly Raw Peanut & Corn Chowder, a Recipe from Dorit’s Book, ‘Celebrating Our Raw Nature – Plant-Based Living Cuisine’

Peanut & Corn Chowder – A Raw Food Dish from Chef Dorit

Makes approximately six servings

I love this recipe because I find that even those totally committed to cooked foods actually relish it in a way that is reminiscent of their favorite cooked fare. In the autumn months, this can also be warmed in a dehydrator or a slow cooker to allow the warming quality of the recipe to be fully savored.

  • 1 quart celery juice, freshly made
  • 1 cup truly raw peanuts
  • 1 11 oz cup raw corn kernels
  • 3 tbsp hemp seed oil
  • 1 cup onion, diced
  • 1 jalapeno, seeded and diced
  • 3 cloves garlic, minced
  • 3/4 cup truly raw peanuts, chopped
  • 1 bunch chives, chopped
  • Dash of Hawaiian or Portuguese Sea Salt to taste (available from Selina’s Salts)
  • Dash of cayenne pepper to taste

Add all the ingredients, except for the chopped peanuts and chives, into a very powerful blender. Mix well for a smooth chowder, or very little for a thick chowder. Chill the chowder for about an hour. Just before serving in (chilled) bowls, add the chopped peanuts and chives.

For a slightly sweeter version, substitute 1 quart of freshly made apple juice for the celery juice.
