A Raw Food Recipe for ‘Tuna’ from Registered Nurse, Advanced Health Practitioner, and Chef Rene Oswald.

Nutuna – A Raw Food Dish from Chef Rene Oswald

Serves Six to Eight

Salad Dressing:

  • 1/2 cup cashews, soaked
  • 1/4 cup pine nuts, soaked
  • 2 tablespoons sesame seeds, sprouted
  • 1 stalk celery, cut into 1 1/2” pieces
  • 1/4 cup fresh-squeezed lemon juice
  • 2 large dates, soaked in water for 15 minutes and pitted
  • 1 clove garlic
  • 1 tablespoon chickpea miso
  • 3/4 – 1 cup water

Place the above salad dressing ingredients in a high-speed blender. Run on high speed with tamper until smooth mayonnaise consistency.

Mock Tuna:

  • 1/2 cup almonds, soaked
  • 1/2 cup sunflower seeds, sprouted
  • 2 tablespoons sesame seeds, sprouted
  • 4 stalks celery, cut into 1 1/2″ pieces
  • 3 tablespoons fresh-squeezed lemon juice
  • 1 tablespoon kelp flakes
  • 1 tablespoon dulse flakes
  • 2 tablespoons dill weed

Place the above ‘Mock Tuna’ ingredients in food processor with the S-blade and process until finely chopped.

Garnish:

  • 1 zucchini, chopped
  • 5 scallions (green onions) or 1 small sweet onion, chopped

In a bowl, combine the chopped zucchini and onion with the desired amount of salad dressing and mock tuna. Enjoy!

    btw, bird nest (http://www.geocities.jp/hongkong_bird_nest/index_e.htm) is made up of about 58% soluable proteins…the highest amoung all food and even synetic protein powders

    it greatly increase tissue regeneration
