One day my daughter Evie’s Gran, Christine, brought us a beautiful orchid; so, I just had to make a chocolate to celebrate its presence! Vanilla is the only edible orchid, which is why it’s in here. Out of all the chocolates I’ve made, this one is Evie’s favorite, as it’s light and sweet – just like her Gran.

Serves: Yield depends on the size of molds used.

Your question of the day: Do you like cinnamon buns!

Click here, scroll down to the bottom of the page and leave your comments now!

Here’s the raw food recipe:

Raw Gooey Cinnamon Buns

Ingredients:

1 1/4 cup almond meal
1 cup ground flax seed
1 1/4 cup soft pitted dates
1/4 cup water or more if needed
1/4 cup softened coconut oil
1/4 cup raisins
1/4 cup chopped pecans
2 tablespoon cinnamon
1 tablespoon coconut butter
1 teaspoon vanilla
1 pinch sea salt

Preparation:

Fold the almond meal, ground flax seed, 1 Tbsp. cinnamon, pinch sea salt, and pinch of vanilla in a bowl. Set aside.

Process dates, 1/2 of the raisins, water and vanilla into a paste in a food processor. Then remove half of that paste mixture and add it to the dry ingredients, along with the coconut oil.

Mix these ingredients with your hands until it forms a dough. You may need to add a little water or oil if it is too dry.

Spread the dough out on a piece of parchment paper, and shape it into a 1/4-inch thick rectangle.

Take the rest of the date paste left in your food processor add the remaining raisins, 1 Tbsp. of cinnamon and coconut butter. Process until smooth. Then, spread a thin layer of the paste onto the dough.

Using the parchment paper to help hold everything together, carefully roll the dough into a log. Chill in the refrigerator, and then slice into about 1-inch thick rounds.

These cinnamon rolls can be eaten right away or warmed in a dehydrator.

Optional:

Cashew Whipped Cream

By Nomi Shannon
1 cup cashews, soaked at least 2 hours
4 dates – soaked at least 2 hours
vanilla bean
water (enough to yield a light fluffy mixture)

Annmarie was inspired by a recipe she saw on GoneRaw.com

She called them hemp bars, but I thought they were more like brazil nut cookie dough bars, or something like that!

Regardless, they are the best tasting treats I’ve had in years and I have no problem eating them even through they’re loaded with fat.

Sometimes treats are good for you… (once or twice a YEAR!)

Take a look…

Here’s the recipe…

Raw Food Dessert Brazil Nut Cookie Dough Bars

2 cups ground hemp seeds
2 cups ground Brazil nuts
1/2 cup raw honey
1/4 cup coconut oil
2 tsp cinnamon
1 tsp vanilla powder
1 tsp nutmeg
pinch sea salt

Combine all ingredients in bowl and knead and massage until dough is formed. Flatten in pan and cut into 1 inch square bars. Put in freezer until firm. To store keep in freezer.

You can always put dough in the refrigerator for a few hours then roll out and cut with cookies cutters into fun holiday shapes

Honestly, I wouldn’t until we met Jeff Botticelli.

When we ran into Jeff and we saw the artistry of what he was making, we knew he had transcended the “chocolate craze” and was actually producing something made with skill, artisanship and love.

What he makes at ChocolaTree in Sedona, AZ are amazing treats… they’re premier gourmet treats, not something sugary that you stuff in your mouth one after another.

You’ve got to see how easy he makes this look and how special these really are…

(And yes, I tried one… but that was all I needed for the next 6 months!)

Take a look…

Today, I’m going to reveal a little more research that I’ve done about agave to help you determine for yourself if you think agave is a healthy sweetener or not.

We’ve stopped using agave in our recipes and do our best to make sure it doesn’t sneak in the RV in a dehydrated product.

Here’s some more on it, plus some other questions!

Take a look…
