<p>I&#8217;ve been to Peru at least thirty times in the last ten years, and each time one of my favorite places to visit has been the open market. Here one can find every kind of food and medicinal herbs, and even burlap sacks of coca leaves. It&#8217;s very cool – and healthy! </p>
<p>When walking the aisles, I pass stalls stacked with mountains of avocados. There are big ones, which Peruvians call Paltas, that look and taste like giant Hass avocados, and there are small ones that fit two into the palm of you hand. There are also sacks of key limes, hills of tomatoes, and armies of potatoes.  <strong></strong></p>

<p><strong>Fresh Beet, Avocado, Grapefruit and Mint Salad with Lime Vinaigrette</strong></p>
<p><strong>Salad:</strong></p>
<p>4 Beets &#8211; grated<br />
8 slices of grapefruit (seeds removed)<br />
8 slices of avocado<br />
2-3 leaves of mint</p>
<p><strong>Optional:</strong></p>
<p>Handful of Miner&#8217;s lettuce<br />
3-4 leaves of sorrel</p>
<p><strong>Dressing:</strong></p>
<p>2 small limes, or 1 large<br />
2 tbsp Olive Oil<br />
dash of sea salt</p>
<p>Arrange on you plate as you like!  This will make 2 big servings.</p>

<p>Also, thanks to those who criticized me as well.  Even to the guy who said I&#8217;m a health fraud since I got a bacterial infection. <img src='http://renegadehealth.com/blog/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>
<p>Everyone is entitled to an opinion, whether I agree or not!  Though I <strong>will</strong> publicly disagree with him&#8230;</p>
<p>Last night was tough&#8230; I had a massive fever, sweats and didn&#8217;t get much sleep at all.</p>
<p>But today is much better and I&#8217;m positive that I won&#8217;t have those symptoms again.  (I have no idea if they were due to the Lyme or the antibiotics!)</p>
<p>Annmarie was ready to do today&#8217;s show on her own in case I didn&#8217;t feel well, but I feel much better today&#8230; so you get both of us!</p>

<p><strong>Raw Kale Avocado Salad Recipe</strong></p>
<p>1. Take one bunch of organic kale and separate the leaves from the stems. (Put the stems aside for juicing)<br />
2. Wash the leaves well and cut them into small pieces, first lengthwise, then widthwise.<br />
3. Add a 1/2 teaspoon of Himalayan sea salt and 1 tablespoon of olive oil. Massage into the kale with your hands. This softens the leaves.<br />
4. Add 1/2 a ripe avocado and again mix in with your hands.<br />
5. Add the juice of 1/2 a lemon.<br />
6. Add a chopped raw tomato.<br />
7. Add 3 chopped green onions.<br />
8. Add 2-3 tablespoons of raisins or dried cranberries, or goji berries <img src='http://renegadehealth.com/blog/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /><br />
9. Mix it all together and serve.</p>

<p>2 Tbs. Raw Cacao Nibs<br />
1 Tbs. Pumpkin Seeds<br />
1 Tbs. Ground Flax Seed<br />
1 Tsp. Oregano<br />
1 Tsp. Cumin<br />
1 Handful of Fresh Cilantro<br />
1 Red Bell Pepper<br />
1 Jalapeño<br />
1 Tsp. Agave Nectar<br />
1 Pinch of Sea Salt</p>
<p>Grind all the dry ingredients in a coffee grinder, then add the peppers and agave and puree in the <a href="http://www.renegadehealth.com/vitamix-blender.php">Vitamix</a>.</p>
<p><strong>Raw Walnut Meat</strong></p>
<p>3 Cups Walnuts (Soak for 1 hour)<br />
1 Tsp. Cumin<br />
1 Tsp. Coriander<br />
1/3 Cup Nama Shoyu</p>
<p>Put ingredients in the food processor for a minute or so.</p>
<p><strong>Raw Salsa</strong></p>
<p>1 Small Organic Red Onion<br />
1 Quart Organic Cherry Tomatoes<br />
1 Small Organic Green Pepper<br />
1 Handful of Cilantro<br />
2 Tbsp. Olive Oil<br />
1 Tbsp. Cumin<br />
1 Lime (Juiced)<br />
Cayenne to Taste<br />
Sea Salt to Taste</p>
<p>Put in Food Processor and pulse 10-15 times.</p>
<p>Mexican Rice</p>
<p>1 Cup Rice<br />
2 Tbsp. Olive Oil<br />
1 Tbsp. Cumin<br />
1 Lime (Juiced)<br />
Cayenne to Taste<br />
Sea Salt to Taste</p>
<p>Put the rice in a food processor before you soak it and pulse 10-15 times to break it up.  Soak for 2 days or until soft to taste.  Make sure you wash frequently.</p>
<p><strong>Finally&#8230; the Raw Burrito</strong></p>
<p>Collard Greens<br />
Lettuce<br />
Cilantro<br />
Shaved Carrots<br />
Avocado<br />
(And anything else you want inside!)</p>
<p>Blanch the collards, and cut up the lettuce, cilantro and avocado. Fill &#8216;em up with all the good stuff above and drizzle some mole sauce on top!</p>
