My Number One Salad Recipe

This is my number one salad recipe! I never get tired of this salad because you can have it as a complete meal rather than a just a side. Try it! I love it because it doesn’t require any dressing. It’s very filling and tasty.

Fred’s Salad Recipe

The ingredients:

  • Greens
  • Various veggies (tomatoes, cucumbers, etc.)
  • 1/2 avocado (optional)
  • 1 ounce diced tofu or smoked tofu (this is also optional but tasty)
  • 3/4 to 1 cup of cooked beans (chickpeas are great)
  • A handful of berries or other fruits (peaches, mangoes). I love this component because it adds sweetness to the salad. But not everybody likes fruit in their salad. Something to try. I find it makes the salad much more satisfying!
  • Lemon or lime juice (Optional)
  • Nutritional yeast
  • Seasonings (salt sprinkled on top)
  • Balsamic vinegar or balsamic glaze
