This bean sprout salad gives you the feeling you’re eating some exciting cooked Asian meal, yet it’s entirely raw!
It’s spicy and deliciously savory, and makes a perfect dinnertime meal.
Prep time: 10 minutes
- 170g / 6 oz bean sprouts
- 200g / 7 oz sweet corn
- 1 avocado
- 1/2 lemon
Ingredients (salsa dressing)
- 1 tomato
- 1 red bell pepper (capsicum)
- 1 stalk celery
- 6 sun dried tomatoes
- fresh basil
- 1 tsp curry powder
Place the bean sprouts in a bowl with the sweet corn. Squeeze the half lemon over the top, and then toss together.
Add the salsa ingredients to a food processor and process on the S-blade into a chunky salsa sauce. Pour over the salad and toss.
Serve into two bowls. Slice up the avocado and serve on top of the salads with a dash of salt.
