Christine’s Orchid Chocolate from Evie’s Kitchen – A Raw Recipe from Shazzie
One day my daughter Evie’s Gran, Christine, brought us a beautiful orchid; so, I just had to make a chocolate to celebrate its presence! Vanilla is the only edible orchid, which is why it’s in here. Out of all the chocolates I’ve made, this one is Evie’s favorite, as it’s light and sweet – just like her Gran.
Serves: Yield depends on the size of molds used.
2 cups Raw cacao butter
1 cup Raw lucuma powder
1 1/2 cups Raw mesquite powder
4 Tbs Raw coconut butter
4 Tbs Raw cacao powder
4 Tbs Raw carob syrup
1/2 tsp Vanilla extract
Pinch of Himalayan pink salt
Gently melt the butters at a low temperature. In a separate bowl, mix all other ingredients together and then pour on the melted butters. Whisk everything together (or to make the chocolate super-fine, blend in a high speed blender for about thirty seconds to a minute). Pour the chocolate into molds. Allow to set in the fridge before storing or eating. You can pour into one big mold and cut the chocolate up if you don’t have enough small molds.
The chocolate will keep for at least a couple of months in a sealed container in the fridge.
Kev’s Note: Raw chocolate is best taken in small amounts as a treat, not as a health food. There’s no problem having it as a dessert once in a while. Those who have adrenal issues and excessive stress should stay away, since it can cause the adrenals to overwork, create acidity in the body and cause adrenal fatigue.

I’ve never seen carob syrup before…is that something you make by mixing carob powder and water or is it bought somewhere? Anyone know where to get that?

Raw chocolate is a very healthy food, if for you it doesn’t work of course you should’t eat it.
But don’t say that it isn’t a healthy food just because it isn’t good for you.
What works for you it doesn’t mean it will work for everybody.
